Chester County restaurateur Carlos Vegas is bringing delicious cuisine to West Chester with his newest shop, West Chester Chicken, writes Bill Rettew for The Daily Local News.
The shop, located at 34 S. High Street, opened last week. While the tasty chicken sandwiches and wings earn the spot its name, the diverse menu also includes fries, salads, mac and cheese, and water ice.
Sandwiches include “The O.G.,” made with jumbo tenders, honey, pickles, and cheddar, alongside the Nashville and the Buffalo. Other sandwiches come with grilled chicken: the Club comes topped with bacon, cheddar, tomato, romaine, and red onion, and the BBQ comes with bacon and cheddar jack.
West Chester Chicken comes as Vargas’ third restaurant in Chester County. After growing up with a love of cooking, he later worked at Carlino’s Market and Penn’s Table, among other community staples.
Following the 2008 housing crisis, Vargas moved to South Korea to run a successful food cart selling kebobs and burritos. He won an international cooking competition with a Greek recipe before moving back to the U.S.
Vargas now owns Kennett Chicken and Kaboburritos, both in Kennett Square.
With his latest venture, Vargas continues his successful culinary career with the shop’s range of chicken, fries, sides, and drinks. The shop is open every day, with hours from 11 AM – 8 PM on Sunday and Monday, 11 AM – 9 PM Tuesday and Wednesday, and late hours through 2:30 AM Thursday through Saturday.
