Offering a Blend of Mediterranean and Mexican Fare, Kaboburritos Opens in Kennett Square

Kaboburritos, a Mexiterranean Grill, offering a delicious and unique fusion of Mexican and Mediterranean cuisine with options for dining in, take-out, and catering, is now open at the Market at Liberty Place in Kennett Square.

Everything is made fresh daily and to order, so customers won’t be disappointed in the bold and tasty flavors with each bite.

Owners, Carlos and Stephanie Vargas are delighted to bring this restaurant to Kennett Square and look forward to serving you delicious food that is healthy, fresh, and convenient each and every time.

Kaboburritos offers fresh traditional chicken Döner kabobs. Customers can enjoy this meat (cooked on a rotating, vertical broiler in front of guests) on a wrap, pita, rice, salad, or it can be served “Mexican style” on a burrito, taco, or quesadilla.

Additional protein options include beef, pork, shrimp, and falafel.

In addition, the menu features a number of Mediterranean and Mexican side dishes and appetizers, including hummus, feta and olives, pita & tortilla chips, falafel, pico de gallo, and guacamole.

Kaboburritos also features a variety of vegetarian options as well.

“The Market is a great community gathering location and that’s what I love about it,” Carlos Vargas said. “With a variety of shops and options, guests can come with their families and enjoy a great time.”

Kaboburritos began in South Korea in 2010, when Carlos turned his motor scooter into a mobile food stand.  He engineered the back of his scooter to hold a rotating grill and catering trays on either side to hold various food items.

During the day, Carlos would park his scooter, dubbed “The Kebab Scooter” by the locals, on busy city streets and sell his delicious donor kebabs to hundreds of excited patrons. In addition to selling his delicious food on the streets, Carlos offered delivery and catering.

The iniative was so successful that he upgraded his food operation to a small food truck and added Mexican dishes to his menu. Upon preparing to return home to the United States, Carlos sold his business and is proud to say that it is still in operation today, under the name “Kebabs Plus.”
