Roots Cafe in West Chester Has Grown to New Heights of Popularity Over the Years

Roots Cafe in West Chester is one of the most popular brunch spots in town.

The exceptional farm-to-table cuisine prepared by Roots Cafe in West Chester has resulted in long lines of patrons eager to try the delicious brunches, writes Ed Williams for Main Line Today.

Dan Cellucci first opened the cafe in 2013. Original chef Dan Merola decided to buy the business in 2020 and make some major changes to it, like dropping the evening menu.

“We weren’t happy with the experience we provided for dinner,” said Merola. “So now we’re the only seven-day brunch place with a liquor license.”

The risk paid off as the popularity of the cafe has continued to grow to new heights.

The menu currently focuses on comfort food, such as its rich mac and cheese topped with crispy maple-roasted Brussels sprouts. There are also several vegan options, including the thick, sweet, candied pumpkin bisque.

The cocktail program at Roots Cafe is handled by Merola’s wife, Debra. An apple cider margarita and a coffee martini with local Turks Head brew are just some of the many highlights.

“She has fun with the cocktail program, and her enthusiasm translates to the selections,” said Merola.
