A new vegan restaurant in West Chester is part of the post-pandemic efforts of esteemed restauranteurs Rich Landau and Kate Jacoby to wind down. Ground Provisions is both a market and restaurant in one, serving innovative dishes, with a country charm interior, writes Craig LaBan for The Philadelphia Inquirer.
The couple previously ran the now-shuttered restaurant V Street and continues to run Vedge in Philadelphia. Ground Provisions lives at the former Dilworthtown Inn. The five-course tasting is $75, which is considered a steal for the quality of food.
The couple wanted to start anew and work on much-needed “soul searching” post-pandemic, by downsizing their vegan empire and focusing on the Chester County spot.
“It feels very different here. Much more of a mom-and-pop situation, more relaxed, very family-oriented and close-knit,” said chef de cuisine Brandon Beringer.
Ground Provisions seats 28 guests, giving it a more intimate vibe. Notable dishes include Hickory King polenta, Carrot pastrami, and hand-cranked noodles infused with fennel and salsa verde.
