A trio of West Coast transplants has revitalized the former Kennett Square Inn, transforming it into one of the borough’s new favorite spots, Letty’s Tavern, writes Ed Williams for Main Line Today.

Jacob Short, Matthew Killion, and executive chef Daniel Daley (who also run Saucey’s in West Chester) have created something truly impressive with their latest endeavor.

Daley procures all the seasonal ingredients from local farms and businesses and then uses them to create perfectly topped toasts, delicious pastas, and savory short ribs. One of the early favorites on the menu is vegan crispy cauliflower with romesco sauce and pistachio pistou.

The establishment also offers must-try cocktails, such as an exceptional mushroom-infused Old Fashioned. The playful, gin-based Cheech Marin is also a great choice.

Letty’s Bottle Shop, which encompasses the entire ground floor, is “a vessel for all things artisan wine,” said Short. “We look to host monthly tastings, winemakers dinners, tasting menus with pairings, and wine parties.”

The interior is adorned with modern art, which suits the basement vibe perfectly.

“It coincides with the eclectic and unique ethos of the bottles the shop houses,” said Short.
