Avondale residents Elaine and Eric Kelleher keep busy over the weekends with On the Roll, their successful food truck business, writes John Chambless for the Chester County Press.

The two started their first catering business when they got married. When their children arrived, however, they had to put it on hold.

Now, they’re back into the business of food.

“We looked into different venues of food service and found that owning a food truck was the best fit for us,” said Elaine.

She and her husband enjoy the flexibility of the food truck. It allows them to change the menu to cater to different clients, and to decide how often they work. There’s also the advantage of being able to roll up wherever they want.

Their truck does not have a signature dish, but the Kennett Mushroom Melt and quesadillas are always a hit.

“We’ve seen the food truck trend grow right before our eyes,” said Eric. “We do have other friends in the business who have been very helpful with advice and sharing ideas.”
