Pocono Organics Partners with Pocono Raceway to Provide NASCAR Fans with Healthier Snacks

Pocono Organics is partnering with Pocono Raceway to provide NASCAR fans in northeast Pennsylvania with healthier snack options, writes Jason Nark for the Philadelphia Inquirer.

“The market is not just chicken fingers and French fries,” said Nick Igdalsky, the Raceway’s CEO. “Yeah, there’s going to be a lot of that, but what about the lettuce and tomatoes that go on top of it?”

Those will be handled by Pocono Organics, an upcoming, 50-acre farm that is the brainchild of Ashley Walsh, granddaughter of the Pocono Raceway’s founder, the late Joseph Mattioli.

The farm will include 40,000 square feet of solar-powered greenhouses with a vegetative roof to collect rainwater, along with a 30,000-square-foot processing and storage building. Next, Pocono Organics plans to open a storefront and a wedding space, along with wellness and yoga retreats.

Produce grown on the farm will be offered to both fans and racing crews, while the raceway will supply the farm with compost made from leftover food.

The farm is expected to create 100 jobs, and will focus on employing veterans who are looking to transition into organic farming.
