Philly-Based Insomnia Cookies Coming to West Chester

Philadelphia’s Insomnia Cookies is expanding its regional presence with two more locations, one of which will be in West Chester, writes Kenneth Hilario for the Philadelphia Business Journal.

The company was founded 14 years ago at the University of Pennsylvania. It creates immensely popular cookies in various flavors, including chocolate chunk, snickerdoodle, and S’mores deluxe.

The new West Chester shop will be at 142 West Gay Street, replacing the Olive Branch restaurant. While no date has been given by the company’s spokeswoman, it is expected that the new location will open its doors to eager customers sometime this summer.

In addition to the West Chester location, Insomnia Cookies is also opening a store in Philadelphia’s Old City.

In its early years, Insomnia Cookies operated food trucks that serviced the needs of students at Temple and Drexel. However, it has since retired those trucks in favor of brick-and-mortar locations.

“Food trucks are part of our brand’s history and growth, but we are pleased to be relocating into larger spaces where we can best serve our customers,” said Chief Operating Officer David Lasus.
