West Chester-based Andiario has made the list of the ten best Philadelphia-area restaurants of 2024, recognized for their innovation, quality, and unique offerings, writes Craig LaBan for The Philadelphia Inquirer.
Andiario offers an ever-changing $80 four-course supper, influenced by the seasonal bounty from local farmers, including the restaurant’s married owners Chef Anthony Andiario and Maria van Schaijik.
Andiario expresses the terroir of southeast Pennsylvania while relying heavily on his Italian training, where a light touch is exactly what is required when the ingredients are so perfect and fresh.
A November menu featured bay scallops, their sugar-sweetness enhanced by a coating of crushed chile peppers and finger limes, along with wood-roasted capon breasts served atop a leg meat terrine, marbled with thyme-scented capon mousse.
The pasta was equally impressive: gargati, a tender Venetian macaroni made using a hand-cranked extruder, and then tossed in a creamy romanesco puree that creates a buttery green sauce. This is further complemented by the florets, crunchy breadcrumbs, and the unexpected touch of finishing with salted fresh cod flakes.
As a dessert, the chef prepared roasted pears with custardy zuppa inglese.
