Sweet Amelia’s in Kennett Square Has Potential for Great Success
The husband-and-wife chef team Zack and Karessa Hathaway behind the new Kennett Square bistro Sweet Amelia’s have plenty of talent to succeed with their delicious seasonal flavors and some daring combinations, writes Craig LaBan for The Philadelphia Inquirer.
The couple met at Johnson & Wales, and have worked — often together — at several restaurants worldwide over the years. Now, they are earning a worthy identity in the Philadelphia region as ambitious operators with a seasonally-driven menu.
Among the menu highlights are the chicken skin tea sandwiches, a homage to the couple’s multi-month culinary journey across Australia six years ago. To make the mouthwatering offerings, the chefs braise skins from nearby Lindenhof Farm in buttermilk and cayenne. They then fry them into crispy sheets and layer them on white bread with seasonal garnishes.
The popular sandwich is also the only static item on the menu. Other offerings reflect the ever-shifting produce from local growers.
The couple also collaborates with other establishments when necessary, including turning to Zack’s pastry chef sister, Ashley Hathaway, for desserts. They also partnered with R5 Wines, the Downingtown wine bar, for the drinks.
