A Tip of the Cap to This New Restaurant in West Chester That Defied the Odds to Open During the Pandemic

Stove & Tap in West Chester is one of 18 new restaurants in the Philadelphia region that defied the pandemic and opened its doors in 2021, writes Laura Smythe for the Philadelphia Business Journal.

The eatery was originally scheduled to open in 2020, but its start date had to be moved to February 2021. And despite the labor shortage and supply chain issues, Stove and Co. Restaurant Group, which already has locations in Lansdale and Malvern, decided to go ahead with introducing its latest spot.

The company invested $850,000 in building out its latest concept, according to co-owner Justin Weathers. The concept is looking to capitalize on what he refers to as a competitive suburban market.

The menu items are varied and include something for everybody, including ahi tuna, burgers, pizza, sandwiches, and salads.

Meanwhile, the drink options include 12 taps that feature various local and national beers.
