West Chester native Joseph Langdon and his fiancée Jennifer Murray are gearing up for the grand opening of their new shop, Three Birds Coffee, in Easton, writes Mario Sanchez for The Lafayette, the oldest college newspaper in Pennsylvania.

For a long time, the couple’s dream was to open a coffee shop in a cool building in a nice town. Now, that dream is coming true, as they are in the process of renovating the historic Bull Mansion and aim to open early next year.

“We like the town and location; it’s right near the college,” said Langdon.

Langdon and Murray have partnered with Passenger Coffee and will offer high-end coffees at their shop. They also plan to use pour-over coffeemakers and seasonal menus to allow people to taste coffee from all around the globe.

The coffee shop will have a co-working space for artists that intends to create an inspired working community.
