Lisa Keys of Kennett Square is among the finalists for this year’s Get Wild with Wild Rice recipe contest by the Minnesota Cultivated Wild Rice Council, forgoing what Kennett Square is known for (mushrooms) and making her mark in a different food industry, writes staff for The Times of Chester County.
As September is National Rice Month, the recipe contest has taken place for 15 years, bringing in delicious rice recipes from around the country. National Rice Month was elected in 1991 to showcase the impact and importance that rice has on American cooking and other cultures it celebrates.
Keys has been cooking her own recipes since the 1970s. She has liked to enter cooking competitions for fun and to practice her skills since the 1990s. In 2014, she was also a Food Network’s Chopped champion in New York City.
Her Pan “Fried” Wild Rice recipe is below:
2 cups cooked wild rice
¾ cup each: shredded carrots and frozen baby peas
1 egg, lightly beaten and softly scrambled
thinly sliced scallions and toasted sesame seeds, garnish
Sauce (whisk together):
2 tbsp each: canola oil and low-sodium soy sauce
1 tsp toasted sesame oil
2 cloves garlic, grated
1 tbsp grated fresh ginger
1 tsp kosher salt
¼ tsp white pepper
In large skillet, combine wild rice, carrots, and sauce; cook until carrots are tender. Stir in peas and egg; heat through. Garnish.
