West Chester Baker ‘Living the Dream’ at Recently Opened Storefront on South High Street

Oxford resident Vicky Lambert is a one-woman show at Happy Bakery, a recently opened bakery at 34 South High St. in West Chester, writes Bill Rettew for The Daily Local News.

“The favorite thing about baking is the creativity,” Lambert said, who also has a huge sweet tooth. “I love to bake.” She added, “I’m living the dream.”

She opened Happy Bakery on Dec. 2. The storefront is open on the weekends from 9 AM to 3 PM, or until supplies run out, but Lambert starts her day way earlier than that.

She’s up enjoying that fresh bakery smell at 3 AM, creating her ideas and trying new things until she gets it right each time. Her ingredients are high-quality as she only picks the best for baking. Some of her sweets include cinnamon rolls and sticky buns, banana pudding, brownies, small cheesecakes, and other selections that vary from week to week.

Additionally, she adores the welcoming community and has gotten to know regulars by name who stop by to purchase her goods and give feedback.
