Two Execs Leave Local Food Chains to Open New Taco Bar in Downingtown

Megan Bruton and Charles William “C.W.” Bruton are leaving their executive positions at two local food chains to start their own taco bar in Downingtown, writes Kenneth Hilario for the Philadelphia Business Journal.

The married couple had always dreamed of starting their own food business. Now, they are leaving Insomnia Cookies and Saladworks to start Estrella Tacos y Mas, a 260-seat taco bar in Downingtown that specializes in Texas-inspired breakfast tacos.

Megan resigned from her role as chief marketing officer at Insomnia Cookies in June, while C.W. will leave his position of vice president of operations at Saladworks in October.

The pair made the decision for several reasons, but more family time topped the list.

“The draw to spend more time with our family,” said Megan.

The taco bar is only the first of several concepts the pair is planning. The next step is to add outside investors to Charred Brands, their new holding company.

“The possibilities are endless, really,” said Megan. “We have a broad range of experience and backgrounds in the industry and are passionate about different things.”
