Ray Maxwell, chef and owner of the restaurant known as the Fire Hill Pub for the last two years, is turning back the clock by returning the establishment to its original roots as the Brown Derby, writes Chris Barber for Daily Local News.

The first indication of the change for passersby on Baltimore Pike in Toughkenamon, was that the familiar sign with the old logo had replaced the Fire Hill placard. When asked if this meant the return of big lobsters and prime rib, Maxwell simply answered “Yes.“

The Brown Derby first opened its doors to local residents 82 years ago, and soon became a place everyone visited for its delicious Italian cuisine, hearty fare, confirmation meals, and many family reunions.

The restaurant was bought over two years ago by Kennett Square’s Olen Grimes, Steve Burkes, and Ray Maxwell, who hoped to modernize it. The newly open Fire Hill Pub was welcomed by the community, but not long after, friends began telling Maxwell that they were missing the old days when they could order lobster and steak.

“At the time it was a fad to do a pub. But me being a chef, I don’t need to cook wings and burgers,” Maxwell noted.

Today, with his new partner, Aaron Luna, they are changing back both the name and the menu.

“We’ll have 10-ounce lobsters and steaks, also a Sunday brunch. We’ll have specials on the old prime rib, and it will be on the Friday and Saturday menu,” he said.
