Rescuing One Bacon End at a Time, West Chester’s TBJ Gourmet Aims to Build Facility, Launch New Products
West Chester-based TBJ Gourmet has launched an equity crowdfunding round withplans to use the proceeds to build a production facility and launch new products, writes Monica Watrous for the Food Business News.
The maker of bacon jam collects excess trimmings from pork processors to make its sweet and savory spreads. To create the jams, the company cooks the bacon ends with caramelized onions, brown sugar, and apple cider vinegar.
TBJ Gourmet offers several types of spreads, including classic, sweet chili, black pepper, and honey habanero.
“To date we’ve rescued over 500,000 pounds of bacon ends,” said Michael Oraschewsky, TBJ Gourmet founder and CEO.
Founded in 2013, the company has already sold over a million jars of bacon jam.
