West Chester’s Andiario Has Quickly Become One of the Region’s Hottest Dining Spots

With handmade pasta and locally sourced food, West Chester’s Andiario has become one of the hottest dining spots in the entire region.

When they were envisioning their restaurant in West Chester, Tony Andiario and Maria van Schaijik wanted a place where people strolling down Gay Street in the late afternoon and evening could drop in to have dinner, writes Roger Morris for The Hunt magazine.

Two and a half years later, anyone wanting to dine at Andiario and try some of its now-famous handmade pasta will have better luck if they make a reservation in advance. In fact, the couple’s eatery has become one of the hottest dining spots in the region.

The pair met while working at a restaurant of superstar chef Chris Bianco in Arizona. Soon, they decided to move back east and open their own eatery.

At the West Chester restaurant, Andiario is the chef while van Schaijik handles the operational side of the business. The chef describes his oeuvre as “adaptive Italian” made with locally sourced food.

And while they have gained regional fame, the pair still prefers to take a more measured view of success.

“Every night that we can walk out and feel good, that’s really nice,” said Andiario.
