Restaurant Picks West Chester for Next Location Since ‘It’s a Little Bit Country, Little Bit Rock and Roll’

Following the opening of its Malvern location, Stove & Tap is ready to continue its expansion with a new restaurant in West Chester, writes Kennedy Rose for the Philadelphia Business Journal.

The West Chester location should open its doors at 158 West Gay Street in the spring. The owners chose the county seat because it’s a fun, dense town that is walkable, said Stove & Tap partner Justin Weathers.

“It’s a little bit of country, a little bit of rock and roll,” he said.

The West Chester restaurant will be the fifth location from the Stove & Co. Restaurant Group that was formed by Weathers and partner/chef Joe Monnich. They also run the Stove & Tap in Lansdale, The Bercy in Ardmore, and Al Pastor in Exton.

They decided to create the restaurant group to keep all of their restaurants under the same umbrella and created a management team passionate about suburban dining.

“I believe in the suburban market,” said Weathers.
